Healthy nutrition from Chiva Som
The bright, fresh flavours of Thai cuisine are all present and with each recipe high in nutrients whilst low in fat, salt and sugar, this is clean eating at its most satisfying. Recipes include succulent meat dishes, highly nutritious vegetarian dishes, fish delicacies and surprising desserts.
I have had the pleasure of experiencing food cooked by the chefs from Chiva-Som and it was light, healthy, nutritious and very satisfying. Demonstrating that healthy food can be interesting and appealing as well as being good for you too. I have included a simple recipe below from the book to inspire. It’s a simple muesli that is good for the gut, easy to make and absolutely delicious, so I hope you enjoy the healthy nutrition from Chiva-Som.
Perfect for breakfast, quick and easy to make and able to be prepared in advance. Muesli contains oats that’s high in fiber, which supports healthy digestive function, improves cholesterol and blood sugar control, and fills you up, aiding in weight control. The addition of nuts provides a great source of protein and omega-3 fatty acids.
- 40 g (1½ oz) rolled oats
- ¼ red apple, finely sliced
- ¼ green apple, finely sliced
- ½ tbsp black raisins
- ½ tbsp yellow raisins
- 1 tbsp roasted and chopped walnuts
- 1 tbsp lightly roasted and finely chopped almonds
- ½ tsp Ayurvedic digestive aid
- 2 tbsp honey
- 1.25 L, 1¼ qt/5 cups) plain yoghurt
- coconut chips for garnish
Place the rolled oats, apples, raisins, walnuts, almonds, Ayurvedic digestive aid and honey in a bowl. Fold through the yoghurt. Place in the refrigerator for at least 3 hours to allow the flavours to develop (best overnight). To serve, spoon the muesli onto a plate and sprinkle with the coconut chips.
