The Spa Man’s summer breakfast recipe:
Breakfast is one of my favourite meals of the day – I love a wholesome, hearty feast that includes oats and berries. Winter for me is usually porridge and berries with honey and cinnamon. Summer, however is a time to change the routine.
I do my own take on the famous bircher muesli. It’s a popular breakfast across the European continent (and growing in the UK) which is based on uncooked rolled oats, fruit and nuts. Developed around 1900 by Swiss physician Maximilian Bircher-Benner for patients in his hospital, I absolutely love it and during summer it’s the mainstay of my breakfast.
I have listed below my recipe – but you can be fully flexible with it. Add different seeds, nuts and dried fruit, top it with banana, grated apple – whatever takes your fancy. There is no standard cup – a coffee cup or tea cup will suffice.
The Spa Man’s Bircher Muesli
3 cups of porridge oats
1/2 cup of mixed dried fruit (raisins, sultanas, cranberries, apricots)
2 Tablespoons of chopped nuts
1 Tablespoon of linseeds of chia seeds
Plain natural yoghurt
Mix the dried fruit, nuts, seeds and porridge oats in a glass bowl and pour in apple juice – to just cover the mixture. Cover with clingfilm and leave in the fridge overnight. In the morning, put 3 Tablespoons of the mixture in your cereal bowl and mix in 2 Tablespoons of natural yogurt. Top with fresh berries or fruit. EAT.
This is a substantial amount – but I like a decent sized brekkie after the gym.
Play around with ingredients and quantities. It is delicious, you get the heart benefits of oats, the skin nourishing benefits of nuts and seeds, some calcium from the yoghurt and the skin brightenening effects of berries.
